I remembered just last year, I went to a fancy resort with my besties. We surfed, built sandcastles, played volleyball. We even rode a motorboat to see one island to another. It was loads of fun. 

But since we all love parties, all the good times didn’t end during the day. It went on until evening. Let me just share with your some of our ideas for summer dinner party. I know for a fact that some of these meals will come in handy when you throw your own summer dinner party!

Have I ever told you I love chicken? There could be multiple choices on the menu but chicken will always be my number one option. This is one of the best chicken recipes to enjoy. You may use chicken breasts for a more scrumptious meal.

  • Lobster Rolls

Dinner parties can last an entire night. Having a few lobster rolls will give you and your friends something to munch on without having to put on more rice calories. If not, you can also use it as a snack before the main appetizer. 

  • Gazpacho

It was my friend who ordered this and I had absolutely no idea what it was. I thought it was some kind of fillet. But when the waiter served it, I realized that this just pertained to the no-cook soup. If you’re like me then you are probably used to hot soup but Gazpacho is excellent for summer parties because the last thing you need during this time is more heat. 

  • Olive-and-Spice-Rubbed Leg of Lamb

I consider lamb to be a bit exotic and it is precisely why I love it. Nothing beats going to a distant place and eating all the meat you’ve never tasted before.

Grilled food is just a whole lot better compared to boiled or fried ones. And I know that none of our summer plans would be complete without our good old griller friend. 

I can’t begin to tell you how much grilled food we had on the table last summer. There were chicken (naturally), shrimp, squid, fish, and a lot more.

Oh yeah! I remember this one! I had no idea who ordered this and I was only a few moments away from complaining about the vegetable on the table. Can you blame me? Who orders grilled potatoes anyway? But it tasted splendid! The only potatoes I eat are mashed potatoes and potato salad. I had to add one more to the list. 

  • Grilled Chicken Wings

If you ask me, these chicken pieces are perfect when you are passing the time and just want something to munch on. This chicken dish is an all time favorite summer recipes.

  • Jalapeño Popper Burgers

This is certainly one of the most delicious things I have ever tasted! I love eating one of these burgers right before bed. It’s as good as pineapple bun burgers, which is something you should not miss out on! Another twist to this is to make cheeseburger cabbage wraps, instead of using buns!

  • Mediterranean Grilled Eggplant

These are the best! You may not believe me now but go ahead and try them for yourself. I love dipping them in soy sauce.

If we had to eat all grilled food, we would end the summer catching a cold or worse some kind of fever. It’s just not very healthy. 

Even though it’s summertime and we are all just having a good time, it would still be best to be mindful of what we eat. 

If you ask me, the best thing to do would be to vary the food choices. Of course, we have our good old fried meals and then we should also have a set for healthy food. 

With that in mind, I have some ideas for healthy summer dinner recipes that you might just like. 

  • Ahi Poke Bowl

If you haven’t been to Hawaii before, you should know that Ahi Poke Bowl is one of the most popular meals there. You should definitely try it out. When I tasted this last year, it immediately made me realize that Hawaii was the place I wanted to visit next. So, I guess that is where I am headed this summer. 

  • Salsa Verde Shrimp with Cilantro Rice

You should never leave vacation until you try this wonderful meal!

  • Zucchini Enchiladas

I swore to God that I would only take one slice but I ended up eating half of the plate. There were a lot of us on the beat so we had to order one more plate.
