How to make Chinese Vegetable Soup
Skip the takeout and going to an expensive Chinese restaurant! This Chinese Vegetable soup is one of my favorite Chinese soups (and just soups in general) out there because it is very healthy and easy to make!
Ingredients:
- 1 head of bok choy, sliced
- 1 carrot, sliced
- 1 cup sliced mushrooms
- 2-3 sprigs of cilantro, chopped
- 4 cups vegetable broth, low sodium
- 1 inch fresh ginger, chopped
- 3 to 4 cloves of garlic, minced
- 2 tbsp soy sauce
- 1 tsp sesame oil
- salt and pepper to taste
Instructions:
Add the vegetable stock to a large pot and bring to a boil over medium-high heat.
Slice the vegetables if you haven’t yet.
Lower the heat and add in the sliced carrots, mushrooms, garlic, ginger, bok choy, and cilantro.
Add in the soy sauce next and stir. Season with salt and black pepper according to your taste preference.
Cook everything for about 5 to 7 minutes or until the bok choy becomes soft enough.
Transfer the soup into serving bowls. Drizzle with sesame oil.
Best served hot.

It is pretty hard to mess up this recipe because there isn’t really any complicated cooking method you need to do when making this soup.

- Feel free to add more vegetables to your soup! Sometimes I add broccoli, green onions, celery, scallion, napa cabbage, and more!
- Tofu also works great in this soup if you need protein in your meal.
- If you want to make sure that your vegetable soup is full of flavor, you can add more sesame oil or other spices you prefer. I also recommend adding any of the following: rice vinegar, red pepper flakes, celery salt, paprika, curry powder, curry powder, or just more salt.
