How to make this weight watchers taco soup recipe

This weight watchers taco soup is one of my favorite WW recipes that is very quick and easy to make yet it can fill you up as a whole proper meal does. You can use a stock pot or an instant pot or a slow cooker! This taco soup is packed with healthy nutrients while keeping your diet in check. 

Ingredients: 

  • 1 pound extra-lean ground turkey
  • 1 medium yellow onion peeled and diced
  • 14.5 ounces of chicken broth
  • 1 packet of taco seasoning 
  • 1 packet of ranch seasoning mix 
  • 15 ounces canned black beans (rinsed and drained)
  • 15 ounces canned kidney beans (rinsed and drained)
  • 15 ounces of canned corn (drained)
  • 15 ounces canned diced tomatoes
  • 8 ounces of tomato sauce canned
  • 2 teaspoons of paprika (optional)
  • 1 teaspoon of onion powder (optional)
  • salt and pepper to taste

Instructions: 

In a large pot, cook the ground turkey and diced onion in a large stock pot until they are browned and no longer pink. Once you brown the meat, drain the excess fat and add in the taco seasoning mix and dry ranch seasoning mix. 

Add the canned black beans and kidney beans as well as the corn, diced tomatoes, chicken broth, and tomato sauce. Stir the ingredients together and add in your preferred seasoning like paprika, garlic powder, etc. 

Stir more and cover the stock pot with a lid. Let it simmer for 20 minutes while stirring occasionally. 

Let cool for a few minutes and serve. 

More notes and tips for the best healthy taco soup 

You can make taco soup like this very easily using a large pot or a crockpot. Plus, you won’t really need to do a lot of monitoring since you will let it simmer mostly. But, if you want more tips to get the best results and taste for your weight watchers taco soup, then I have some notes for you:

  • You can also use other ground meat such as ground beef if you do not prefer ground turkey. But ground turkey has leaner meat which is preferred if you are trying to cut your fat intake. You can also use shredded chicken or ground chicken.
  • Taste the soup occasionally while cooking and add more seasonings or salt and pepper when needed. Feel free to experiment and add your preferred seasonings as well (paprika, cumin, chili powder, etc.).
  • If you want a thicker soup, you can scoop about 1/2 cup of the hot broth into a bowl and whisk in 2 tablespoons of cornstarch. You will now have a slurry. Add it back to the pot and allow it to simmer for 15 to 20 minutes. 
  • Use low-sodium chicken broth as much as you can.
  • If you are going to use fresh veggies (onion, pepper, green chilies, etc.) make sure you soften them first when cooking for the first time so that they will be rich in flavor.

What to serve with Weight Watchers Taco Soup

You can easily make this soup and eat it on its own since it is already filling and flavorful. However, if you want to add more flavors and experience a full meal set, you can serve this taco soup with other side dishes and pairings.

But be aware of the additional Weight Watchers points it will add. 

How to store taco soup leftovers 

If you have any taco soup leftovers, you can easily store them in an airtight container inside the fridge for 3 to 5 days. You can also freeze your taco soup and it will last for up to 3 months. 

Just let the taco soup cool completely first without the toppings then put the leftovers in an airtight container or Ziploc freezer bag. 

To reheat, just pop the soup back in the microwave and cook for 3 to 5 minutes. Add your favorite toppings after reheating to keep the ingredients fresh. 

Can you use a slow cooker or instant pot to make taco soup? 

The answer to that is yes! Soups and stews are generally good to cook in a slow cooker or instant pot so you can easily make this recipe with these cooking tools. Just be sure to spray the inner pot with some cooking spray.
