Ingredients:

1 pound beef Flank Steak, thinly sliced

8 medium whole wheat flour tortillas or Chinese pancakes

3 cups packaged coleslaw mix

1/2 ounce dried shiitake mushrooms

1/3 cup hoisin sauce

2/3 cup sliced green onions or scallions

1 tablespoon cornstarch dissolved in 1/4 cup water

For the marinade:

1 tablespoon sesame oil

2 tablespoons reduced-sodium soy sauce

2 tablespoons water

2 teaspoons sugar

2 teaspoons minced garlic

Instructions:

Soak your mushrooms in 1 cup of hot water for around 20 minutes or until the mushrooms have softened.

Drain well and remove the stems of the mushrooms. Cut the mushroom caps into thin strips next.

Cut your beef steak lengthwise in half, then cut crosswise into thin strips. Stack 3 to 4 strips at a time then cut lengthwise in half.

Combine all the marinade ingredients in a large bowl. Add the sliced beef strips into it and toss to mix everything.

Refrigerate the mixture for 20 minutes to marinate.

After refrigerating, drain the beef and discard the marinade. Heat a large nonstick skillet or wok over medium-high heat until hot.

Add 1/2 of the beef to the skillet, and stir-fry for 1 to 2 minutes or until the outside surface of the beef is no longer pink. Make sure you do not overcook the beef.

Remove and repeat the process with the remaining batches of beef.

Combine the beef, mushrooms, coleslaw mix, green onions, and cornstarch mixture in the skillet.

Cook everything and stir until the sauce is thickened and bubbly.

Spread hoisin sauce on the tortillas, get some beef mixture on a spoon, and place it on the center of the tortilla wrap.

Fold the bottom edge of the wrap over the filling, and fold the right and left sides towards the center, overlapping.

Best served hot. Enjoy!
