It’s summer, which means more outdoor barbecues! While potato salad and iced tea should be served at every backyard barbecue, the meal isn’t complete without a cool summer dessert to keep you refreshed under the heat. If you don’t want to turn on your oven or heat up your kitchen, here are 15 delicious and refreshing summer dessert recipes to try!

I could remember one summer that I went to Los Angeles just to try out a baking course that I’ve always fancied during the semester. It was one of my first few baking lessons. It centers on desserts. I never really took the time to put a name on it but looking back at it now, I figured the recipes I learned there were perfect for summer desserts. I know how we all love desserts around here which is why I know you will really enjoy this post on refreshing summer  dessert recipes

Top Summer Desserts

We rarely talk about desserts when thinking about summer. Most of the time, the conversation would revolve around the places that we’d want to go to. But you have to admit if it weren’t for good BBQ desserts for a cookout, not even the most expensive destinations would mean anything. 

So before we delve into the real deal, maybe you’d want to indulge in some of these top summer desserts:

  • Strawberry Shortcake

This is definitely first on the list? I mean who among us here has never dreamt of munching on these sweets on vacation when we were kids? It just feels so good on the mouth with its whip cream and soft dough. 

  • Blackberry Chip Ice Cream

It entails everything you could ever want in a dessert. There is the chocolate cookie, the sweet blackberry, and most importantly, ice cream. 

It may not be the ordinary dessert that you’d imagine to be served on the table but once you get a taste of these goodies, dessert won’t be the same again without them. 

  • Lemon and Blueberry Cupcake

I always loved blueberry almost as much as I love blackberry but I have to admit that I was never a fan of lemon. 

I couldn’t imagine what these berries would taste like paired with lemon. But it blew my mind. It was one of the best cupcakes I have ever tasted. 

My Favorite Summer Desserts

I do have my favorite summer desserts. We’re going to talk a bit about them below just before we start discussing the recipes that all of you are dying to know about. 

  • Peach Melba Ice Pops

Ice pops – they’re sort of like ice cream but they are a lot easier to make for yourself. There is no need for fancy equipment. All you need is the ingredients and your fridge. 

  • Creamy Frozen Raspberry Mousse

Depending on how long you’ve been following my blog, you may have noticed how much I love creamy food. And this frozen raspberry mousse suffices as one of my favorites as far as creamy goodies are concerned. 

  • Frozen S’mores

I don’t know if I ever told you this before but I am really into camping. And you can imagine that when I do go camping, I’d be super obsessed with smores. 

But when you’re at home, you really wouldn’t want to make a campfire just for your marshmallow goodies. You can get a bit more creative than that. Why not make some frozen S’mores?

Light Summer Desserts

Desserts are great but they also pack a lot of carbohydrates. You might say that it’s not the kind of food for people who are trying to stay in shape. 

But that’s not always true. Just because you need to be in your best physical condition does not mean that you have to avoid all your favorite goodies. 

However, you do need to readjust your desserts. You cannot stick to your regular desserts all of the time. Luckily, I know some light summer desserts that are just as delicious as all the sweets that we know too well but won’t lead to weight gain. Here are some of them. 

  • Blueberry Compote

It’s basically just some kind of frozen blueberry yogurt but one that you can serve in a bowl. It’s one of my favorites. Even though it doesn’t pack a lot of calories, it’s still one of the best desserts out there. 

  • Grilled Bananas with Maple Creme Fraiche

Grilled bananas made me cringe the first time either. But a friend recommended it to me and so I just had to give it a chance. And I have to say it was a decision that I didn’t regret. It was really delicious. 

  • Raspberry Tart

 I just love tart! Don’t you? This is most certainly the kind of dessert that you need to try at least once in your lifetime. 

Summer Dessert Recipes With Cream Cheese

I’ve been really excited to share this one with you. I am pretty sure that there is at least one blog post where I mentioned my love for cream cheese. I mean, who doesn’t love cream cheese anyway? 

 

In this section of this post, I am going to tell you a bit about the best summer dessert recipes with cream cheese

  • Oreo Delight

The name suits the dessert so much. It is certainly delightful not just because of the cream cheese but also Oreo. 

  • Rhubarb Cheesecake

I’d say that this is the perfect dessert. It’s not too sweet but at the same time, it will most definitely satisfy your sweet tooth. It can maintain its creamy goodness from start to finish. I think this was the third cream cheese recipe that I learned in my younger years. 

  • Eggnog Cheesecakes

I saw this recipe from my friend’s folder once. The Eggnog certainly got my attention. I never thought that it was going to be a people pleaser. I recommend this recipe for beginners since you get to make these goodies without the actual baking. 

  • Keto Pumpkin Pie

I would never expect cream cheese to be present in anything with a pumpkin on it. But believe me. You will taste the cream cheese in every bite. The taste is quite tantalizing but it’s okay because it’s a keto recipe. You can eat as much as you want without having to worry too much about how it will impact your workout and diet.
