This recipe is one of the best chicken fried rice recipes for those who are craving for a delicious rice meal. This recipe is packed with rich flavor and is very simple to make.

How to make chicken fried rice recipe

Ready to make fried rice? You can make your favorite Chinese meal with simple ingredients and straightforward steps! So you do not worry if you are a complete beginner in cooking.

With that in mind, you will just need a few ingredients for this great recipe: 

Ingredients: 

12 oz, cut into 1/2-inch cubes of uncooked boneless skinless chicken breast

2 cups cooked long grain brown rice

4 large Egg whites

½ cup chopped scallions / green onions

½ cup thawed Frozen peas (preferably green peas) 

½ cup diced Carrots

2 cloves of minced Garlic

3 Tbsp of less sodium soy sauce

Cooking spray

Salt and pepper to taste 

Instructions: 

Get a large nonstick skillet and coat it with cooking spray. Set the pan over medium high heat.

Add the egg whites and cook for about 3 to 5 minutes until scrambled while stirring frequently. Remove from the pan and set aside.

 Spray the same skillet with a cooking spray and place it back over medium high heat. 

Add the scallions and garlic, then sauté for about 2 minutes. Add the carrots and chicken and cook or sauté for about 5 minutes until the chicken is cooked through and golden brown. 

Stir in the cooked egg whites, and add the cooked brown rice, peas, and soy sauce. 

Cook everything for about 1 minute while stirring once or twice until everything is heated through. 

Serve.

More notes and tips for making the best chicken fried rice

As you can already tell, you can easily make your own fried rice with a few ingredients and a few minutes of your time! But if you want to get the best results, I have here some more tips for making fried rice quickly: 

  • If you are running short on time, you can use a large skillet or wok and preheat it over high heat before adding the ingredients so that your chicken can be cooked quickly without it becoming soggy. 
  • To ensure that your cooked chicken is tender and rich in flavor, you can marinate the chicken pieces in a mixture of soy sauce, garlic, ginger, and cornstarch for about 15 to 30 minutes before cooking. Stir fry the chicken until it is cooked through, then remove it from the skillet and set aside. 
  • Feel free to add more vegetables like carrots, bell peppers, peas, onions, and broccoli for added texture, color, flavor, and nutrition. 
  • Avoid overcrowding your skillet to achieve the perfect texture and flavor for your fried rice for this recipe. 
  • Cook the ingredients in batches if necessary especially when stir frying the chicken, vegetables, and rice. 
  • For the sake of the 2 Weight Watchers Smartpoints, this recipe uses brown rice but you can also use white rice if preferred.
  • You can use vegetable oil or sesame oil if you do not have cooking spray. 
  • If you are too lazy to cook rice on the same day, you can use a day old cooked rice or save some leftover cooked rice from your previous meal. 
  • You can also use chicken thigh if you do not have a boneless chicken breast.

Since this fried rice already has chicken and a variety of veggies in it, you can easily eat it by itself. But if you want more flavor, then I have here some ideas on what to serve your chicken fried rice with:

What to do with chicken fried rice leftovers

If you have some leftover rice from this chicken fried rice recipe, then do not worry because you do not need to throw it away because you can easily store it in your fridge. Here’s how:

  • Allow the fried rice leftovers to cool down before storing. 
  •  Once cooled, transfer the leftover chicken fried rice to an airtight container and store it inside the fridge for up to 3 to 4 days. 
  • I do not recommend freezing your chicken fried rice because the texture of the rice will become slightly mushy upon thawing. 
  • To reheat, you can use a microwave, oven, or on the stovetop. 
  • If you want the best results, I recommend reheating the chicken fried rice using the stir fry method. Just heat a non stick skillet or wok over medium high heat, add a little oil, then stir fry the rice in.
