Using frozen artichoke hearts transforms this into a speedy meal, exuding sophistication and opulence. However, if you have access to fresh ones, go ahead and use them! The soup boasts a unique, pleasant taste—earthy with a hint of sweetness and a nutty undertone. This essence is enhanced by the robust flavors of additional elements like onions, garlic, and potatoes.

You can maintain its vegan nature or infuse some sour cream or yogurt for a creamier touch. Regardless, the dominant artichoke essence is bound to impress!

Begin by lightly frying onions, garlic, and celery in a spacious pot. Incorporate vegetable broth, artichoke hearts, a handful of potatoes, and your choice of thyme or sage. Let it simmer until the potatoes soften. Once done, give it a thorough blend.

This preparation only calls for 7 basic ingredients, most of which you likely have on hand!

For me, the best way to prepare vegetables is to roast them. Roasting releases the natural sugars in vegetables.
