Working in an office can be a whole lot of fun but I’ll tell you this. Working in this kind of setup can also lead to a ton of weight gain. Food is just part of team bonding. Besides, each time a new challenge shows its face at work, nothing beats munching on your favorite comfort food. So, back when I was still working in an office I had to find a way for me to be in good shape without having to sacrifice so much in terms of the food that I eat. The solution that I found was Keto breakfast casserole.

It became a favorite like you wouldn’t believe. Even after I quit office life, keto breakfast casserole continued to become a thing for me. In this article, I am going to share with you some of the recipes I learned over the years along with several ones that I crafted myself.

Keto Egg Casserole
I really love my morning eggs whether it is sunny side up, scrambled eggs, or boiled, you name it. I will always appreciate eggs being served on the table.
So, when I saw this recipe on keto egg casserole, I simply couldn’t resist. It is a great way to start your day. It is also pretty easy to make. All you need is some cheese casserole, eggs, (of course), some spices, and sausage, and then you will be good to go to make your keto egg casserole.
The first thing you need to do is to saute the garlic in a skillet. Afterward, you can add whatever meat you want to add in. You may want to add some vegetables as well. If you do, you can go ahead and prepare them. You may want them to be half-cooked so that the nutrients are retained. Whip your eggs and spices and then you are good to go.
What Is A Good Casserole Breakfast Without Eggs?
But wait second! What if eggs aren’t for you? Not to worry because I know a certain recipe that you can follow. You can make your keto casserole breakfast and you don’t need to add in any eggs.
I was able to try this casserole myself and it was pretty good. I never thought it could workout without the eggs but this left me speechless.
For this, you are going to need a can of sour cream, a pound of sausage, a cup of milk, shredded cheddar cheese, onion, mushroom soup, salt, and some hash browns.
It has a pretty interesting ingredients list. Now, what you do need to do is to fry the onion and sausage until they turn the color brown. Put all the ingredients into a bowl, add meat, and then stir.
Take out your pan and then spray it with some oil. This is important so that your masterpiece doesn’t get ruined after. Pour the whole thing into the pan. Now, you are ready to bake your casserole.
Keto Sausage Casserole
You are going to find lots of keto sausage casserole recipes online but this one is extra special. The reason is that it includes eggs once again!
It’s fantastic because one: it’s low-carb, two: it’s relatively easy to make, and lastly, you can make them in advance. You could make several of these things for the week on a Sunday and then won’t go bad.
Here are the ingredients that you will need to prepare:
- Onion
- Green bell pepper
- Sausage
- Eggs
- Mustard
- Whipping cream
- Worcestershire sauce
- Seasonings
And those are basically it!
What you need to do is to fry your sausage until it goes brown. Add in your onions and green bell peppers all chopped up. Before you proceed, make sure to drain the excess grease.
Take out your casserole dish and then pour your casserole into it. You can also add in your vegetables as well. Once your casserole is evenly set up, you can combine all other ingredients into the dish except for one thing: your cheese. You have to save it for later as a sprinkle on top.
Once you’ve sprinkled the cheese, you can start baking the casserole for 25 minutes.
Keto Monte Cristo Breakfast Casserole
Monte Cristo used to be a TV series that I religiously watched as a child. I don’t know but there was just something so cool about the storyline. I could barely remember a thing as to why I loved it so much but when I saw the name tied to one of my favorite dishes: casserole, I couldn’t help but try baking it for myself to see if it was as good as the TV show.
My efforts did not go to waste. It was yet one of the best things I’ve ever tasted as far as keto casseroles are concerned.
I’ve been told that the keto Monte Cristo casserole became popular due to Disneyland. Apparently, the chefs from Disneyland didn’t really invent the recipe. It has been around for quite a while but it wasn’t really that famous. And it just eventually withered away until Disneyland gave a name to it.
Someday, I just want to visit Disneyland for the sake of tasting all the goodies the place has to offer. It seems to be awesome.
Now, going back to our topic on casseroles, there are a few things I want to share with you before making your own Monte Cristo casserole:
- Remove the pan as soon as the butter melts to prevent it from getting overcooked.
- Pour only enough egg layers into your pan so you don’t have to wait too long for your casserole to be cooked
- Don’t overcook the bottom egg layer so that your casserole is soft cooked.
So basically, you are going to need unsalted butter, cream cheese, eggs, dried ground mustard, mayonnaise, baking powder, pink Himalayan salt, uncured unsweetened ham, apple cider vinegar, gruyere cheese, and sugar-free raspberry jam.
The first thing you have to do is to melt the butter in a pan. And then you can combine all sediments with a blender. Make sure that the mixture is completely smooth.
Now, start adding just enough of this batter into a pan. Put it into the oven until it sets. Take it out before it gets brown. Now, it’s time to layer some slices of ham into the egg base. Afterward, you can a few more slices of provolone cheese. Next comes the jam.
Pour whatever remains of the egg batter and then set it in the oven for 15 minutes. Allow it to rest for another 5 minutes before taking a bite.
