  • Salt and pepper to taste
  • Chopped parsley (optional, for sprinkling)

I do not recommend peeling the skin of the potatoes since the skins can help your potato wedges become ultra crispy once in the oven!

Place your potato wedges in a large bowl and add the garlic powder, onion powder, paprika, and salt.

Add in your extra virgin olive oil and toss or mix to coat the potato wedges in the oil and seasonings.

Place your seasoned potatoes in a single layer on a parchment baking sheet – do not overcrowd the potato wedges.

Bake at 425 degrees F for around 40 to 45 minutes and make sure to flip the wedges and rotate the pans halfway through the cooking time.

Once crispy and golden brown, your potato wedges are ready!

Sprinkle with chopped parsley or grated parmesan cheese and pair with your favorite dipping sauce.

  • You can also try using minced garlic instead of garlic powder if you want that extra crunchy goodness.
  • If you have extra time on your hands, you can soak your raw potato wedges in hot water for 10 minutes before adding the seasonings and baking. This makes the potatoes release some of their starchiness and absorb moisture – leading to crisp outsides.
  • You can make potato wedges cheesy! Once they are done baking, sprinkle some shredded cheddar cheese and return them back to the oven and bake for 5 to 10 minutes until golden or bubbly on top.
  • Experiment and switch up your seasonings. For example, can add Cajun spice or cayenne pepper if you want your potato wedges a bit spicier.
  • When laying your potato wedges on your baking tray, make sure that the cut sides are laying flat on the sheet.
  • If you want to prepare your potato wedges beforehand, you can start cutting the potatoes 1 to 2 days before you bake them. Just store the cut wedges in an airtight container with cold water in the fridge.
