Ingredients

  • 2 cups of mashed potatoes
  • ½ of a medium onion, chopped into very small pieces
  • 1/8 teaspoon salt
  • 1 teaspoon oil
  • 1 egg, slightly beaten
  • 2 tablespoons all-purpose flour
  • Black pepper
  • A bit of spinach (for the second option only!)

How to

  1. Boil the potatoes and mash them before starting this recipe. You’ll need 2 cups of mashed potatoes, mix them with an egg, chopped onion, 2 tablespoons of flour, salt, and pepper.
  2. For the second version of the recipe (see photo below), you will need to mix into the mashed potatoes a bit of spinach. Just enough to add a bit of color to the cakes but not too much. Also, I don’t know your kids but my daughter will always prefer the boring non-spinach option. So if you are not sure how your kids will react to the “weird green stuff” in the potato cakes, just skip the spinach.
  3. Heat the oil in a large skillet on medium and start adding potato mixture – each little cake will take about 2 tablespoons of mixture.
  4. Cook on one side until it’s getting golden, turn to the other side with a spatula.
