Weight Watchers Chicken Recipe with Sour Cream and Onion

This Weight Watchers chicken recipe with creamy onion sauce is an easy and quick meal that’s delicious and healthy, your family will love it!

Ingredients

  • 3 chicken breast halves
  • 1 medium-sized onion
  • 5 medium-sized mushrooms
  • 1/2 cup fat-free sour cream
  • 1 cup of water
  • 1/2 packet of onion soup mix
  • ¼  teaspoon of black pepper
  • ½ teaspoon of salt
  • ½ tablespoon of cornstarch

How to

  1. Slice the onion and mushrooms, sauté them with olive oil for about 3 minutes on a high temperature, mixing the vegetables all the time so they don’t stick to the pot. Use a medium-sized pot since you will only cook 3 chicken breast halves in it. Add ¼ teaspoon of black pepper. 
  2. Cut chicken breasts in halves and place them in the pot, add 1 cup of water (the chicken breasts have to be covered by water, so depending on the size of your pot, you might need a bit more or a bit less of water than in my recipe). Add the onion soup mix, ½ teaspoon of salt and mix the ingredients until the onion soup mix is fully dissolved in water.
  3. Cook at a medium setting for about 25 minutes until most of the water evaporates. Not all of it though since you’ll need a lot of sauce for this chicken. 
  4. Reduce the fire to the minimum and add 1/2 cup fat-free sour cream, mix until you get a homogeneous sauce. If the sauce doesn’t look thick enough, mix ½ tablespoon of cornstarch mixed with two tablespoons of water aside and add to the pot.


This chicken recipe has a lot of sauce and goes well with rice or mashed potatoes.
