Ingredients
- 3 chicken breast halves
- 1 medium-sized onion
- 5 medium-sized mushrooms
- 1/2 cup fat-free sour cream
- 1 cup of water
- 1/2 packet of onion soup mix
- ¼ teaspoon of black pepper
- ½ teaspoon of salt
- ½ tablespoon of cornstarch
How to
- Slice the onion and mushrooms, sauté them with olive oil for about 3 minutes on a high temperature, mixing the vegetables all the time so they don’t stick to the pot. Use a medium-sized pot since you will only cook 3 chicken breast halves in it. Add ¼ teaspoon of black pepper.
- Cut chicken breasts in halves and place them in the pot, add 1 cup of water (the chicken breasts have to be covered by water, so depending on the size of your pot, you might need a bit more or a bit less of water than in my recipe). Add the onion soup mix, ½ teaspoon of salt and mix the ingredients until the onion soup mix is fully dissolved in water.
- Cook at a medium setting for about 25 minutes until most of the water evaporates. Not all of it though since you’ll need a lot of sauce for this chicken.
- Reduce the fire to the minimum and add 1/2 cup fat-free sour cream, mix until you get a homogeneous sauce. If the sauce doesn’t look thick enough, mix ½ tablespoon of cornstarch mixed with two tablespoons of water aside and add to the pot.
This chicken recipe has a lot of sauce and goes well with rice or mashed potatoes.
