21. Easy Paleo & Vegan Christmas Mashed Sweet Potatoes Recipe

EASY mashed sweet potato recipe – perfect for weeknight dinners or holidays. It’s paleo, vegan, dairy-free, sugar-free, gluten-free, and oil-free, yet full of flavor and easy to make.

Christmas is just around the corner and it’s about time I shared a mashed sweet potato recipe.

This super-easy sweet potato mash recipe is simple and elegant enough to serve at Thanksgiving or Christmas dinner and relaxed enough for a weeknight family meal. The best part? Unlike the usual version, these easy healthy mashed sweet potatoes are totally refined-sugar free.

My kids love sweet potatoes. They’re a go-to side dish for family dinners. Not only are they delicious, but they’re good for us and easy to make.

The boiled sweet potatoes are mashed until smooth and then mixed with ghee butter and coconut milk, to create an easy and quick side, that doesn’t take up oven space. Plus boiling them makes them extra soft, smooth and creamy.

I might say that this easy mashed sweet potato recipe is one of the easiest paleo side dishes you can make. It just takes time to peel the sweet potatoes, mash them and blend in the ingredients.

Even on a busy weeknight, easy mashed sweet potatoes are so quick to put together, full of wholesome deliciousness and great as a side dish. And, making mashed sweet potatoes paleo doesn’t require anything special – just use ghee instead of butter.

Mashed Sweet Potatoes are still too high carb for a low carb diet, but excellent for a paleo diet. They happen to be whole30 friendly, too.

Many paleo and gluten-free followers eat them with no problems at all because they are a nutritional powerhouse of antioxidants, vitamin A and B6, packed with iron, magnesium, and fiber.

19. Chocolate Irish Whiskey Tart – Delicious Vegan Christmas Dessert

Indulge in this delectable Chocolate Irish Whiskey Tart, a vegan and gluten-free delight perfect for St. Patrick’s Day or any time you desire a sumptuous dessert. The best part? It takes just nine ingredients to create this tantalizing, boozy chocolate masterpiece!

It’s hard to believe that March has already arrived, heralding the approach of spring. It feels surreal, especially as I gaze out at another snowstorm. While part of me longs to leap into April for warmer days, doing so would mean skipping over one of my most cherished celebrations, St. Patrick’s Day.

So, perhaps a brief pause in mid-March would be ideal to partake in the revelries, including savoring an Irish Mule and a slice of this exquisite whiskey tart, before embracing the spring season. Sounds like a plan, right?

All kidding aside, this dark chocolate tart is a perfect match for those looking to pair a dessert with Irish whiskey on St. Patrick’s Day.

This recipe has been my go-to for the past few years, consistently winning over any crowd. It’s completely devoid of dairy, embracing its vegan identity, and boasts such a rich, chocolaty essence that even a small portion is immensely satisfying.

18. The Best Sage And Onion Vegan Stuffing Recipe for Christmas Dinner

Whip up this delightful four-ingredient sage and onion stuffing in just 30 minutes! Perfect as a sumptuous side for Christmas dinner or any roast meal, this recipe gets a flavor boost from the inclusion of red onion.

Gone are the days when stuffing was non-vegan, traditionally made from poultry giblets. This sage and onion stuffing recipe is a modern, completely vegan twist on the classic.

While pre-made vegan sage and onion stuffing options are available, with even traditional brands like Paxo offering ‘accidentally vegan’ products, always double-check the packet for hidden ingredients like milk powder.

However, nothing beats the taste of homemade stuffing. Not only is it more flavorful, but it’s also surprisingly simple to make, offering more satisfaction than any store-bought packet could.

17. Plant-Based Mashed Potatoes (Oil-Free) – Perfect Vegan Christmas Side Dish!

Savor the smoothness of these creamy, plant-based mashed potatoes, a perfect oil-free side dish for any occasion. Simple to make with everyday kitchen staples, they can be whipped up in under 30 minutes, offering a satisfying addition to your meal.

At our house, we have a special fondness for potato-centric recipes. Whether it’s a hearty chickpea potato curry, a fresh vegan potato salad, or a unique potato-based pizza crust, potatoes continually impress us with their versatility in the kitchen.

Begin by thoroughly cleaning your potatoes, then cutting them into even 1-inch chunks.

A useful hint: there’s no need to peel your potatoes. Leaving the skins on not only adds texture but also boosts the nutritional value.

16. Best Vegan Mushroom Crostini

Delight your holiday guests with this tantalizing vegan mushroom crostini recipe, a simple yet stunning appetizer.

For those who adore mushrooms, these crostinis are a dream come true. They’re ideal for occasions like Thanksgiving or Christmas, and they’re bound to leave your guests craving more.

And here’s more good news: this recipe is incredibly simple to prepare, requiring just a few staple ingredients. It shares the same ease as another one of my preferred side dishes, pan-seared balsamic glazed brussels sprouts.

Having straightforward recipes like these mushroom crostinis in your culinary repertoire is a lifesaver, especially when guests are about to arrive. And an added perk? No one will even suspect they’re vegan!

15. Unbelievable Vegan Wellington

Impress your festive guests with a delectable Vegan Wellington, the star of any holiday meal. Enveloped in a flaky, butter-like pastry, its hearty filling of lentils and mushrooms, paired with a rich, homemade mushroom gravy, promises to captivate even those accustomed to meat-based dishes.

Put aside traditional meat alternatives and embrace this Vegan Wellington, a dish so robust and flavorful it’s guaranteed to amaze everyone, from vegans to meat enthusiasts.

While plant-based mains like Lentil Stuffed Butternut Squash or Cauliflower Steaks are delightful, they often don’t resonate with omnivores as the centerpiece of a festive feast.

That’s where this vegan mushroom wellington shines. A proven favorite at every gathering I’ve catered, its nourishing lentil and mushroom heart, coupled with the savory depth and buttery crispness of the pastry, firmly establishes it as a substantial main course, distinguishing it from mere vegetable sides.

10. Shredded Brussels Sprout Salad Recipe with Lemon Vinaigrette

Experience the delight of this Shaved Brussels Sprout Salad, a culinary creation featuring finely sliced Brussels sprouts, tender chopped kale, grated carrots, roast potatoes, juicy pomegranate seeds, sweet candied pecans, and smooth avocado, all beautifully mingled in a zesty lemon shallot dressing.

Raw Brussels sprouts are absolutely edible and enjoyable. Their crunchy, fibrous texture becomes more palatable when thinly sliced.

There are several ways to shave or shred Brussels sprouts: using a knife, mandoline, food processor, or even a cheese grater. After experimenting with all these methods, my preferred choice is using a paring knife for its precision and control. The food processor and mandoline are also effective, but I find the cheese grater less suitable due to its instability and less sharp blades.

To prepare the Brussels sprouts, start by washing each one under cool water. Then, trim off the tough base and discard any damaged outer leaves.
