This white chicken chili recipe is an easy but very tasty meal you can do during chilly nights or days when you just want to sit on your sofa, watch a movie, and be all warm and cozy. 

And the best thing? You will barely need to do the actual cooking (just the preparation stage) since your slow cooker will do all the cooking for you! With that in mind, here is one of the best white chicken chili recipes you can do in a crock pot or slow cooker!

How to make white chicken chili in a crockpot or slow cooker

I absolutely love this recipe because you will just basically throw in your ingredients in your slow cooker and you are good to go! This is an easy and straightforward dinner meal that is creamy, tasty, and healthy! 

Ingredients: 

  • 1 lb boneless skinless chicken breasts trimmed of excess fat
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 24 oz. chicken broth
  • 2 15oz cans of beans (drained and rinsed)
  • 2 4oz cans diced green chiles 
  • 1 15oz can whole kernel corn drained
  • fresh cilantro chopped
  • 4 oz reduced-fat cream cheese softened
  • 1/4 cup half and half
  • 1 tsp cumin
  • 3/4 tsp oregano
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper

Directions: 

To start, add the boneless chicken breasts to the bottom of the slow cooker then top with salt, pepper, cumin, chili powder, cayenne pepper, and oregano.

Next, pour in your chicken broth and add the diced onion, minced garlic, beans, green chiles, and corn. Stir to combine. 

Cover your slow cooker and cook on Low for 8 hours or cook on High for 3 to 4 hours until the chicken is cooked through. 

After cooking, remove the chicken breasts and move to a large mixing bowl. Shred the chicken breasts and then toss your shredded chicken back to the slow cooker. 

Add your cream cheese and half and half. Stir and cover and cook on High for 15 minutes or until the white chili is creamy and slightly thickened. 

Stir well and serve with your preferred toppings.

It is actually quite easy to make this recipe since you will not be doing a lot of the cooking process and you won’t need to monitor the white chicken chili all throughout its cook time. But to make this recipe even better, I have here more notes and tips for the best slow-cooker chicken chili! 

  • To make your white bean chicken chili tastier and more presentable, you can add additional optional toppings such as sliced jalapenos, sliced avocados, fresh cilantro, tortilla strips or crushed tortilla chips, and more! 
  • If you prefer chicken thighs over chicken breasts, then feel free to swap an equal amount of chicken thighs. But do note that the chicken thighs may need more cooking time to fully cook. 
  • If you want to thicken white chicken chili more, you just need to combine a splash of milk with gluten-free flour or regular flour and then drizzle that mixture into the crockpot on the last 30 minutes of cooking your chili. 
  • You can also mix 1 tablespoon of cornstarch into 2 to 3 tablespoons of milk or chicken stock. Stir until the cornstarch dissolves then put the mixture into the chili. 
  • Another way to thicken your white chicken chili is to blend part of the beans in an immersion blender prior to serving. You can also use a food processor or blender if you do not have an immersion blender. 
  • If you want to make sure that you use as many healthy ingredients as you can, you can first drain and rinse your canned beans to remove some of their extra sodium content.

How to store creamy white chicken chili leftovers

If you have any leftovers, you can easily store them in an airtight container in the refrigerator for up to 5 days. To reheat, just put your white chicken chili in the microwave or simmer on the stovetop until it is steaming. 

You can also place your white chicken chili in an airtight freezer-safe container and freeze it for up to 2 months! When reheating you just need to thaw them overnight. 

How to make this white chicken chili recipe ahead of time

If you want to make a big batch of this easy white chicken chili recipe because it can be a great food for winter get-togethers or celebrations, or maybe you are saving them for days when you do not have the time or energy to make dinner, then here are some ways on how you can make this recipe ahead of time! 

  • You can prep the ingredients the night before. You just need to add all the ingredients into the removable crock of your crock pot and then place it in the refrigerator (with the ingredients) overnight. After, let the pot sit at room temperature for 20 to 30 minutes then put it back into the base and cook by following the recipe I have provided. 
  • You can also generally just cook everything ahead of time. Follow the ingredients and then transfer your chili to a large storage container. Be sure you let the chili cool completely before transferring first. Scoop the chili into bowls later in the week then just reheat them in the microwave. 
  • You can make white chicken chili freezer packs! Just add all the ingredients into a freezer bag. Make sure you remove as much air inside the bag as possible. Freeze for 24 to 48 hours before slow cooking. Once ready to be used, place the bag in the fridge first for the ingredients to thaw then put everything into the crock pot and cook according to the recipe instructions.
