How to make Bell Pepper Nachos

I absolutely adore this bell pepper nacho boats recipe since it is very filling and tasty without feeling guilty eating them! This is perfect for parties, gatherings, and simple get togethers!

Ingredients

12 oz Uncooked lean ground turkey breast

21 halved and seeded Sweet mini peppers

8 olives, thinly sliced Large canned ripe black olives

½ cup Water

¼ cup Light sour cream

2 tsp Ground cumin

4 Tbsp, chopped Cilantro

2 small, thinly sliced Jalapeño pepper

1½ tsp Unpacked light brown sugar

1¼ cups of shredded Reduced fat cheddar cheese

1½ Tbsp Chili powder

1 tsp Paprika

½ tsp Garlic powder

½ tsp Onion powder

½ tsp Dried oregano

¼ tsp Cayenne pepper

1 Tbsp Apple cider vinegar

1 tsp Table salt

Instructions

Preheat oven to 425°F and prepare a large rimmed baking pan by lining it with parchment paper for easy cleanup later.

For the turkey seasoning: get a small bowl and combine chili powder, cumin, paprika, salt, garlic powder, onion powder, oregano, and a hint of cayenne for a bit of spice if needed.

Mix these spices well and set the bowl aside; this seasoning mixture will be the secret ingredient that brings flavor to your turkey filling.

For the turkey filling: In a large nonstick skillet over medium heat, place the ground turkey and cook for around 4 to 5 minutes. Use the back of a spoon to break apart the meat as it cooks to make sure it browns evenly and cooks through. 

Once the turkey is cooked through, sprinkle the prepared seasoning mixture over it. Stir in the water and lower the heat to medium-low and let the mixture simmer for around 5 to 10 minutes while stirring occasionally until most of the liquid is absorbed. 

Add the vinegar and sugar to the turkey mixture. Let the mixture simmer for an additional 2-3 minutes, allowing the ingredients to combine altogether. 

While the turkey filling simmers, prepare the bell peppers by slicing them in half lengthwise and removing the seeds. Arrange the pepper halves, cut side up, on the prepared baking pan. Make sure they are in a single layer with enough space in between for even cooking.

Divide the turkey mixture evenly among the pepper halves, ensuring each one is filled. Sprinkle with shredded cheese over the top of each pepper. For an extra kick of spice if preferred, add the sliced jalapeno peppers on top of the cheese before baking.

Place the filled pepper halves in the preheated oven and bake them until they’re heated through and the cheese is melted for about 8 to 10 minutes.
