How to make Crockpot Potato Soup

Experience an ultimate comforting meal with this Weight Watchers Crockpot Potato Soup Recipe! You will only need a few ingredients and a few simple steps to make this recipe! 

Ingredients

  • 30 oz diced potatoes – can either be canned or fresh
  • 28 oz non fat chicken broth 
  • 10 ¾ oz fat free cream of chicken soup 
  • 15 oz diced carrots – can either be canned or fresh 
  • 30 oz corn
  • ½ cup diced celery
  • 3 slices turkey bacon 
  • oz low fat cream cheese
  • 1 cup skim milk
  • green onions for garnish
  • Salt and pepper to taste

Instructions

Add all the ingredients except the milk and cream cheese to the crock pot. 

Cook on low for at least two hours. 

Add cream cheese, and cook for about 30 minutes to 1 hour until the cream cheese is mixed into the soup well. 

Add the milk and cook everything for about 15 minutes until heated throughout. 

Garnish with your favorite garnish like turkey bacon, green onions, salt and pepper, and more.

  • Make sure to try and experiment with herbs and seasonings like thyme, rosemary, parsley, paprika, and black pepper to enhance the flavor of the soup without adding extra calories or points.
  • Use low-sodium chicken or vegetable broth to control the sodium content of the soup. 
  • To make the soup more filling, you can opt for adding lean protein sources such as cooked chicken breast, turkey bacon, or crumbled turkey sausage. These additions add flavor and extra nutrition to your soup which makes it a loaded potato soup.
