- ⅓ cup skim milk
- 1 baguette (4x30g slices)
- 1 tbs olive oil
- 1 clove garlic, crushed
- 200g button mushrooms, halved
- 200g cherry tomatoes
- 2 tbs grated parmesan cheese
- 1 tbs chopped fresh chives
- Oil spray
Instructions
- First, whisk together the eggs and milk in a bowl. Then, dip the baguette slices in the mixture, making sure to coat both sides. Set it aside for 10 minutes.
- Heat a large frying pan over medium heat, and add the olive oil. Once hot, add the garlic and mushrooms, and cook for 5 minutes. Add the tomatoes and cook for a further 3 minutes.
- Wipe the frying pan with a paper towel and then lightly spray it with oil. Put it back on the heat, this time on medium-low, and cook the bread 2 slices at a time. After 3 minutes, sprinkle the uncooked side with cheese then turn and cook for 2 more minutes.
- Serve immediately with the mushroom mixture and enjoy!
