It’s the new year and I am sure we all have goals to start or continue. And if your goal includes losing weight, then you may want to start a Weight Watchers diet plan! The benefit of a Weight Watchers diet is that it is very flexible and anyone can adapt to it. It focuses on nutritious low-calorie foods which makes it great for people with high blood pressure, high cholesterol, diabetes, and even heart disease. The Weight Watchers diet also follows a system called SmartPoints which encourages members to make smart and healthy choices. 

And if you want to indulge yourself in some delicious, hearty meal at the start of the year, then a warm casserole is the way to go! However, we all know that a traditional casserole is cheesy, meaty, and fattening. But if you are on a Weight Watchers diet, then you can make your own version of a healthier casserole without all the added fat! A good method for this is to use a slow cooker since this process is one of the healthiest cooking methods you can do. You just toss the ingredients in a slow cooker, set the time, precook the rice, and you’re done!

Good news for you chicken lovers. Skinless chicken breast along with skinless turkey breast is considered as ZeroPoint foods according to Weight Watchers. This means that this type of food helps form the foundation for a healthy eating pattern because they are less likely to be overeaten than other foods. And what better way to get the most taste out of your chicken than by making a chicken casserole? Here’s how you can make a quick and easy weight watchers chicken casserole:


¾ chopped cup onions,

¾ chopped cup celery,

3/4 chopped cup carrots, 

2 cups boneless, skinless chicken breasts, cooked and chopped

14 oz. fat-free chicken broth

2 cups cubed stuffing

1 tablespoon butter

2 tablespoons flour

1/2 cup skim milk

1/4 teaspoon garlic powder

4 oz. low-fat shredded cheddar cheese, shredded


Preheat oven to 350 degrees F. Melt thebutter in a medium pot then add onions, celery and carrots. Saute until tender for about 5 minutes.

Add 2 tablespoons flour and stir well. Slowly add in the chicken broth, stirring as you add it then add in the milk. Add in the garlic powder and let mixture simmer for about 5 minutes.

Turn heat off and stir in the chicken and stuffing. Pour mixture into a casserole dish. Bake for 23 minutes then add cheddar cheese. Return to the oven for 7 minutes. Let casserole cool then serve.
