How do you make sweet potato casserole from scratch
Whether it’s a Thanksgiving gathering or a casual get-together, one must be prepared to prepare a hearty meal that will feed a crowd. What better way to do it than with a casserole? A sweet potato casserole, to be exact! If you are not familiar with a sweet potato casserole, then it is basically a southern-style casserole that is a dessert-like side dish which is made of cooked and mashed sweet potatoes combined with sugar, butter, vanilla, milk, and eggs. The sweet potato mixture is then topped with a buttery pecan and then baked until golden brown. With its sweet filling and savory topping, a sweet potato casserole is definitely a crowd pleaser!
And if you are indeed hosting a Thanksgiving party, then a casserole can be a great replacement or substitute for turkey while it is still in the oven!
Anything can seem overwhelming if you are cooking for a crowd. But do not worry, sweet potato casseroles are actually really easy to make! You just need a few ingredients such as:
large sweet potatoes (number will depend on how much you want to serve/how many guests you have)
2 eggs, beaten
2 tsp plain flour
75g butter, melted
1 ½ tbsp maple syrup
1 tsp salt
For the toppings:
80g chopped pecans

Directions:
If you are serving a crowd, you will need about 5 to 6 medium sweet potatoes for a 9×13 casserole. When selecting the best kinds of sweet potatoes, look for those that are free of any blemishes or bruises.
Preheat the oven to 175C then wrap each sweet potato in aluminum foil. Place the wrapped sweet potatoes on a sheet pan or baking tray then bake in the oven for 1 hour or until the skewer easily inserts into a sweet potato.
Allow to cool.
Remove and discard the peel along with any black bits at the stem or root ends. Place the flesh in a mixing bowl and using a hand mixer, blend the sweet potatoes until smooth.
For the toppings, you just need to combine the pecans, melted butter, brown sugar, and oats with a pinch of salt. Spread the topping over the sweet potatoes and place the dish in the oven, and bake for about 30-40 minutes until it bubbles.
You can actually prepare your sweet potatoes for using in the casserole by baking or boiling them so the cooking method will solely depend in your preference.
And if you have a bunch of leftovers, no need to worry because you can store your sweet potato casserole in the freezer for up to 3 months if wrapped tightly. Meanwhile, it will last 5 days in the refrigerator.
