While contemporary American twists on hummus encompass a variety of flavors, from puréed red peppers to fresh herbs, Solomonov suggests that some of the most sophisticated garnishes found in Israel include the whole chickpeas, paprika, and lemon-infused tahini featured in this authentic hummus recipe.

My initial endeavor involved stripping down my existing hummus recipes to create a basic version. The result was a dense, slightly gritty blend with an overwhelming garlic flavor. Needless to say, I was disheartened.

My next step was a deep dive into the abyss of Google, opening countless tabs to absorb all things hummus.

Praise from the digital world suggests that a certain Israeli chef, Michael Solomonov, is the master of hummus. His creation is so divine that Bon Appetit declared his hummus their 2015 Dish of the Year. This hummus is the real deal.

Solomonov’s trick of the trade? He uses chickpeas that have been stewed until they’ve reached a state of mush.

He also incorporates baking soda in the cooking process. As Bon Appetit explains, baking soda “elevates the pH of the water and assists the chickpeas in breaking down to a soft, pulpy mass… ideal for an ultra-smooth puree.”

Moreover, baking soda aids in dissolving the chickpea skins, eliminating the need to peel them off individually. Who has the time for that?! Nor do you likely have the time to soak your chickpeas overnight and cook them from scratch like Solomonov.

So, here’s my time-efficient workaround: Boil canned or leftover cooked chickpeas with baking soda for twenty minutes.

In the accompanying photo, you can observe the transformative effect of baking soda. Notice how the chickpeas on the right appear to be bursting open more? Their texture is considerably softer as well.
