How to make Chicken Cordon Bleu Recipe 

A chicken cordon bleu may look intimidating to make, but fear not because the process is actually very quick and easy! With that in mind, here is a great recipe on how you can make a restaurant-quality chicken cordon bleu that everyone will enjoy! 

Ingredients 

1 pound uncooked boneless skinless chicken breast, pound the chicken to 1⁄4-inch thickness

4 slices of cooked lean ham

1 large egg, lightly beaten

1/2 cup of cornflake crumbs

1/2 cup of reduced fat milk

1/2 cup of chicken broth

4 slices / 2 oz of low fat Swiss cheese

4 tbsp of All purpose flour

1 tbsp of table wine, Madeira 

1/8 tsp of ground nutmeg

2 tbsp of grated parmesan cheese 

Salt and pepper to taste

Instructions

Preheat the oven to 400 degrees F then spray a baking sheet with nonstick spray.

Working in batches or one at a time, get a piece of chicken and place the chicken breast half on a work surface. On top of the chicken half, place one slice of ham, then one slice of the Swiss cheese. 

Roll chicken and secure the stuffed chicken with a toothpick. Repeat with the remaining chicken, ham, and cheese combo. 

Combine 2 tablespoons of the flour, 1⁄4 teaspoon of the salt, and a little pepper on a sheet of wax paper. Place the egg in a shallow bowl and in another bowl, place the cornflake crumbs. 

Working one a time, lightly dip the chicken rolls first with the flour mixture then shake of the excess before dipping into the egg to coat. Then, lightly coat with the cornflake crumbs and then place on the baking sheet. 

Lightly spray the chicken rolls with nonstick spray and bake for around 30 to 35 minutes. Another way to check if it is cooked is to insert a thermometer into the thickest part of each chicken roll and it reaches 160ºF.

To make the sauce, combine the milk, broth, and the remaining 2 tablespoons of flour. Also add the Madeira wine, nutmeg, and 1/4 teaspoon of salt and a pinch of pepper in a medium saucepan. 

Whisk everything until smooth and cook over medium heat while whisking constantly for around 6 minutes until the mixture is thick. Remove from the heat and stir in the parmesan cheese.

Cover and keep warm until the chicken rolls are ready.

Once the chicken rolls are done, drizzle with the sauce and serve immediately.
