I don’t know about you but pumpkin seeds are one of my favorite go-to healthy snacks. I mean, it is just the perfect size and the perfect amount to munch on when you are watching TV, working, or doing anything from your daily routine!
Plus, pumpkin seeds are actually packed with healthy vitamins and nutrients including antioxidants, magnesium, and zinc!
Now, you may ask, how do you even cook or roast pumpkin seeds especially if they are from a fresh pumpkin? The best and healthiest method for that is by using an air fryer!
You will not be needing to use any type of cooking oil in this recipe which makes it low-carb and guilt-free to eat. With that said, here is my pumpkin seeds air fryer recipe that you can easily do at home!
How to make this air fryer pumpkin seed recipe
Raw pumpkin seeds are easy to make especially if you have the right cooking equipment. This recipe only uses an air fryer to cook and just a very few ingredients to make it tasty and the perfect snack!
Ingredients:
- 1 cup of pumpkin seeds
- 1.5 tablespoons of melted butter
- 1/2 teaspoon of seasoned salt
- 1/4 teaspoon garlic powder (optional)
Instructions:
If you have a whole pumpkin with you, cut the pumpkin in half and remove the seeds. You may want to separate the seeds from the pulp as much as possible.
Put the cleaned and dried pumpkin seeds in a bowl then add melted butter and seasoned salt (and garlic powder if preferred), then stir all together until the seeds are well coated.
Preheat your air fryer for about 4 minutes at 360 degrees F.
Put the seeds in the air fryer basket. Spread the pumpkin seeds evenly as much as you can.
Then set the timer for 10 to 15 minutes while shaking the basket every 5 minutes.
Check to see if the pumpkin seeds are crispy and crunchy enough to your liking, then remove them from the air fryer, allow them to cool, and serve.
How to clean pumpkin seeds
I highly recommend using fresh pumpkin in this recipe. It is because store-bought pumpkin seeds are quite high in sodium and will not be as crispy as compared to cooking pumpkin seeds in the air fryer. And besides, you will not want to feel guilty when it comes to your health while munching on these snacks right?
With that in mind, you may feel overwhelmed on how to remove the seeds from the pumpkin before you clean them, but do not worry because the process is actually very quick and easy!
Here is how you can clean and prepare the seeds for roasting:
- First, carve and cut the pumpkin. Scoop out and remove all the seeds and separate the pulp and seeds as much as you can.
- You can set aside and use the pumpkin shell as a pumpkin puree, pumpkin slices, or bake them.
- To clean, put the pumpkin seeds in a colander and rinse them under running water to remove excess pulps.
- Another option to clean the seeds is to boil the pumpkin seeds in salted water for 10 minutes to help remove the excess pulp.
- After you separated the pulp from the seeds, rinse the seeds with water once more and then lay the seeds on a paper towel or clean kitchen towel. Press gently to remove any excess water.
- Leave to dry for 30 minutes and you can now start roasting the pumpkin seeds in the air fryer!
Notes and tips for the best results for pumpkin seeds in the air fryer
Cooking pumpkin seeds are so easy especially if you use the air fryer! This recipe is very straightforward but I have here more notes so that you will have the best results for your air-fried pumpkin seeds:
- Do not overcrowd the pumpkin seeds in the air fryer or they will not get crispy enough. If you have a large number of pumpkin seeds, cook them in batches.
- You can experiment with your seasonings. You can add garlic powder, salt and pepper, or even smoked paprika for that extra spice!
- I recommend preheating your air fryer while doing the prep work so that your air fryer basket will already be hot when you add the seeds to the air fryer!
- You may also want to check the bottom of your air fryer in any case some pumpkin seeds have slipped out of the basket.
What to serve with air-fried roast pumpkin seeds
These crunchy air fryer pumpkin seeds can perfectly be eaten on their own as a nutritious own but they can also be a great addition to meals and can be served as a side dish or extra ingredient. Here are some ways how you can serve these air-fried roasted pumpkin seeds:
- Serve with air fried Brussels sprouts
- Serve as toppings to casseroles
- Add to oatmeals
- Toss in salad
- Serve in soup
- serve with baked goods
- Serve with granola bars
- And more!
How to store air-fried pumpkin seeds
If you want to store your roasted pumpkin seeds, you must cool them to room temperature first and then transfer the seeds to an airtight container. You can store them on the kitchen counter, in the fridge, or freezer.
When stored, these pumpkin seeds can last up to 1 to 2 weeks on the kitchen counter, up to 1 month in the refrigerator, and up to 3 months when you freeze them.
To reheat, just transfer to the air fryer for 2 to 3 minutes until crunchy again. For frozen pumpkin seeds, defrost them first at room temperature then add the pumpkin seeds back to the air fryer.
